Quick cooking

I don't know if I should create another label for my blog entries for "quick cooking" to separate dishes I cook for fun vs food I cook just to get by. I guess you can always make something that you usually make and put some twist on it. :)

Yesterday is pasta night. You can't believe how quickly you can make a meal. To make the sauce, I have:
- tomatoes (kinda expensive these days, but they just look so pretty)
- onions
- ground turkey (don't always see ground turkey, and even less often when it's on sale!)
- carrots (wanted to get rutabaga, but I still have the "leftover" organic carrots in the fridge, better use that first)

Basically put everything into the pot and add some red pepper flakes and bay leaves. The tomatoes will cook out and give a nice sauce. It's pretty much done.

Here is my twist. I have 3/4 of buttercup squash (baby R is trying new veggies every 5 days, so i do have different kind of veggies at home!) that I made a soup the day before. Since it's kinda thick, I add that to the tomato sauce to make the sauce thicker. It turned out to be pretty good, besides adding extra fiber to the meal.
